Ingredients

  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 2/3 cup grated Parmesan
  • 2/3 cup plain panko bread crumbs
  • 8 chicken drumsticks (about 2 lbs)

Directions

  1. Heat oven to 425 degrees . In a shallow dish, combine flour, salt and pepper. Lightly beat eggs in a second dish. Combine Parmesan and bread crumbs in a third.
  2. Dip drumsticks in flour mixture, then eggs and finally bread crumb mixture. Place on a rack fitted into a rimmed baking sheet. Bake 35 minutes, until coating is crisp and drumsticks are cooked through.
