Ingredients

  • 3 tablespoons unsalted butter or olive oil
  • 1 pound boneless, skinless chicken breasts
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 cloves garlic, sliced
  • 2 cups water
  • 1 cup chicken broth
  • 1 box (12 oz) no-drain penne (such as Barilla Pronto)
  • 1 box (9 oz) frozen artichoke hearts, thawed
  • 1/3 cup soft sun-dried tomatoes, sliced
  • 1/2 cup heavy cream
  • 1/4 cup basil leaves, sliced

Directions

  1. In a 12-inch stainless skillet, heat butter or oil over medium-high. Season chicken with 1/4 tsp each salt and pepper. Add to pan and cook 10 to 12 minutes, turning once, until cooked through. Remove from pan and reduce heat to medium.
  2. Add garlic to skillet; cook 1 minute. Stir in water and broth, scraping brown bits from bottom of pan. Add pasta and increase heat to high. Cook 5 minutes, stirring frequently.
  3. Add artichoke hearts and sun-dried tomatoes. Cook 5 more minutes.
  4. Meanwhile, slice chicken into bite-size pieces. Add to skillet with cream, 1/2 tsp salt and 1/4 tsp pepper. Sprinkle with basil.
