Ingredients

  • 1 pound boneless, skinless chicken breast halves
  • 1 large red onion, cut into 1/2-inch-thick rounds
  • 1 tablespoon plus 1/4 cup olive oil
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pound medium pasta shells
  • 1 pkg (2 cups) mixed cherry tomatoes, halved
  • 4 slices cooked bacon, diced
  • 4 ounces thinly sliced ham, cut into strips (3/4 cup)
  • 3/4 cup diced cheddar
  • 1/3 cup white wine vinegar
  • 1 tablespoon coarse-grain mustard

Directions

  1. Heat grill or grill pan to medium-high. Coat chicken and onion with 1 tbsp oil; season with 1/4 tsp each salt and pepper. Grill both 12 minutes, turning once, or until onion is tender and chicken is cooked through. Cool slightly and cut both into 1/2-inch pieces.
  2. Meanwhile, cook pasta per package directions (about 9 minutes); drain.
  3. In a large serving bowl, combine pasta, chicken, onion, tomatoes, bacon, ham and cheddar. In a small bowl, whisk vinegar, mustard, 1/2 tsp salt and 1/4 tsp pepper. While whisking, add 1/4 cup olive oil in a thin stream. Gently stir into pasta mixture and serve.
