Ingredients

  • 3 tablespoons olive oil
  • 1 large sweet onion, diced
  • 1 yellow bell pepper, cored and diced
  • 3 tablespoons chili powder
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound ground chicken
  • 2 cups yellow cherry tomatoes, halved
  • 1/2 cup water
  • 1 can (15.5 oz) small white beans, drained and rinsed
  • Sour cream and cilantro, for serving

Directions

  1. In a large stockpot, heat oil over medium. Add onion and pepper and saute 5 minutes.
  2. Increase heat to medium-high and stir in chili powder, turmeric, salt and pepper. Cook 1 minute, then crumble in chicken. Brown 3 minutes and stir in cherry tomatoes and water.
  3. Reduce heat to medium-low, partially cover pot and simmer 15 minutes, stirring occasionally.
  4. Add beans and heat through. Serve chili topped with sour cream and cilantro.
