Ingredients

  • 4 cups shredded rotisserie chicken, chopped
  • 1 Gala or Pink Lady apple, cored and cut into 1/4-inch pieces
  • 2 ribs celery, finely diced
  • 1/2 cup light mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 6 large slices whole wheat (or your favorite) bread
  • 6 slices Swiss cheese

Directions

  1. Heat broiler. In a large bowl, toss chicken, apple and celery.
  2. In a small bowl, whisk mayonnaise and next 4 ingredients. Fold into chicken mixture, then divide among bread slices, spreading to edges. Top each with a slice of cheese and broil, 4 inches from heat, 3 minutes, until melted and bubbly. Slice diagonally in half.
